Dessert from Nicaragua: Three Milks Cake
Recipe of “Tres Leches Cake” (Three milks’ cake)
Ingredients
5 eggs
½ cup vegetable butter
1 cup all purpose flour
1 cup sugar
1 teaspoon baking powder
1 cup of condensed milk (or 1 cup of powdered milk plus 3/4 cup of sugar)
1 cup evaporated milk (or 1 cup powered milk plus ½ cup of cold water)
2 cups of regular non diet milk
4 egg whites
½ cup sugar
¼ cup milk
1 teaspoon nutmeg
1 teaspoon cinnamon
2 cups whipped cream
½ half cup nuts, chopped
Procedure:
Beat the eggs and the cup sugar in a double boiler, then continue beating while it is over the fire, until it doubles in size, about 12 minutes. Take it off the fire.
Add by spoonfuls the flour with the baking powder and the vegetable butter, and keep beating until it is very soft. Then bake it on a medium heat oven during 25 minutes, on a greased baking dish.
Meanwhile prepare the cream, putting all milks in a saucepan and bring them to a boil, leaving ½ cup of milk cold. Beat the 4 egg whites until stiff, add slowly the ½ cup of milk; add the egg whites mixture to the boiling milk mixture, removing it from the heat. Add nutmeg.
While the cake is still warm, once taken out of the oven let it cool a little bit until you can touch the mold and not get burned!, then with a fork, make holes in the cake and pour over them the milk mixture. Take it to the refrigerator but not to the freezer for some hours. Serve after some four hours of cooling. Cover with the whipped cream and add on top of it, the cinnamon and the chopped nuts, if desired.
