Dessert from Belize: Sweet Potato Pone

Recipe of Sweet Potato Pone

This recipe is a great favorite in Belize and it comes from old days, being originated in the Garifuna people.  Some people add different flavors, others just do the basic recipe, but either way, it is so very good!!!!
This is a very healthy dessert, all the family loves it and it’s not difficult to make, if you first read carefully the recipe before starting

Ingredients:

2 pounds sweet potatoes
¼ cup of grated ginger roots or if you don’t find this product, you can use grated coconut.
2 cups brown sugar
4 cups of milk (or coconut milk if you prefer)
1 teaspoon grated nutmeg
2 teaspoons vanilla
3 tablespoons melted butter
1 egg

Procedure:

Peel and grate the sweet potatoes
In a large bowl, add the sweet potatoes, the coconut (or the grated ginger roots), and the rest of the dry ingredients.  Mix thoroughly
Add the milk, the egg and the melted butter also.  Put this mixture in a buttered baking dish and take it to a medium hot oven for 40 or 45 minutes in a low shelf of the oven.  Then move it to the higher shelf and let it continue cooking for another 40 minutes.  If you put a knife inside of it, the knife must come clean when it’s done.  The top should be brown.
