Desserts from El Salvador: Sweet Semita

Recipe of Semita de Dulce

Ingredients:

2 cups of all purpose flour
½ cup vegetable butter
1 tablespoon yeast
¾ cup sugar
3 eggs
1 dulce de panela, or 1 cup of dulce de leche,
1/8 teaspoon salt
½ cup water or, if you use dulce de leche, coconut milk (or regular milk)

Procedure:

In a small bowl put the water, or milk, or coconut milk, (warm), and add over it the yeast.
Let it stand for ten minutes.
In a big bowl put the flour, the vegetable butter, ½ cup of sugar, the eggs and salt.  Mix well, add the yeast with the warm water and mix the ingredients well.  Place this dough in a kitchen board and knead it well.  When it doesn’t stick to your hands, put it back in the bowl and cover it and let it rest for a couple of hours.

Divide then the dough in two parts and roll it until it gets thin and large enough to cover the baking dish, which you previously oiled.
Filling:
Cut into small pieces all the dulce de panela, (or add by spoonfuls the dulce de leche) covering all the dough in the baking dish.  With the other half make the dough thin enough and cover the filling.  With the left over dough make long strips and place over the top cover in an across shape, covering it all with sugar.
Bake the Semita for 35 or until it is golden on top.

This is a very popular dessert in El Salvador, and can be served when you serve the coffee.
