Recipe of Honduran Quesadillas
This is a traditional cheese cake from Honduras, made mostly on Christmas time! But we can enjoy it all year through.
Ingredients
1 cup of vegetable butter
2 ½ cups of sugar (it can be done 2 cups of white sugar and ½ cup of brown sugar)
2 cups all purpose flour
2 teaspoons baking powder
1 ½ cups of warm milk
1 cup of rice flour.(or white flour if you wish)
5 eggs
2 cups of grated parmesan cheese
½ cup sugar
¼ cup flour
¼ cup of crashed nuts
Procedure:
Beat together the vegetable butter and the 2 ½ cups of sugar until creamy. Add the flours, mixed with the baking powder, alternating in parts with the warm milk. Beat the eggs, by one, always beating and add the cheese. Put this mixture on a greased and floured baking dish.
In another bowl mix the ½ cup sugar, the ¼ cup of flour and the nuts, and sprinkle this second mixture over the dough into the baking dish.
Take it to a medium hot oven, during 45 minutes, until it is golden on top.
It is cut into squares and is to be served cooled.
In the same dish strawberries can be served to give color to it and an extra taste.
