Desserts from Nicaragua: Pio Quinto

Recipe of Pio Quinto

The name for this dessert seems to be in honor of Pope Pius V.
It is very sweet and can be done either as a big one, or in small cupcakes to be served personally.  We prefer the big cake one, as it looks glamorous brought to the table and cut there to be served.  It is a typical dessert form Nicaragua.

Ingredients:

1 cup coconut milk
¼ cup Agave nectar (we prefer using honey, same proportion)
1 ½ tablespoon cornstarch
1½ tablespoon flour
3 teaspoons vanilla
3 tablespoons water

1 cup of dried plums
1 cup rum

1 package of vanilla cake mix
1 package instant vanilla pudding (for eight servings)
4 eggs
1/3 cup rum
2/3 cup water
½ cup butter

½ cup of butter
½ cup sugar
¼ cup rum
4 tablespoons water
3 tablespoons of cinnamon

Procedure:

Put the dried plums in a large bowl to soak overnight with the cup of rum.

For the custard:
Put the honey, vanilla and coconut milk in a pot and take it to a boil.  When it boils, add the cornstarch and the flour, dissolved in the 3 tablespoons of water.
Beat continuously, take of the fire when it starts to thicken and continue beating until it is thick.  Put this in the refrigerator until the rest of the cake is done.

Prepare the cake:
Put in a bowl the cake mix, the vanilla pudding, 1/3 cup rum, the 2/3 cup water, the 4 eggs, and ½ cup butter.  Beat well with electric beater, until the dough is smooth.
Put the dough in a greased baking dish and take it to middle warmth oven for 30 minutes.  Let it cool once it is done.

Melt the half cup butter, in a saucepan, add the 4 tablespoons of water and the
½ cup of sugar, and boil this for 4 minutes. Then add the ¼ cup of rum.
Using a fork, make little holes all over the cake and let it get soaked wet in the inside pouring over the rum mixture.  Take it then to the refrigerator for a couple of hours.

When it is all very cold, add on top the vanilla custard that was prepared in the first moments, then dust it all over with cinnamon and top it with the dried plums taken out of the rum.

This is a really delicious cake, a wonderful dessert for any meal you can think of!
