Desserts of Costa Rica: Atol de Naranja
Recipe of Atol de Naranja (Orange Cream)
8 big oranges
2 teaspoons of cinnamon
2/3 cups of cornstarch
2 1/3 cups of sugar
1 tablespoon butter
2 tablespoons of grated orange rind
Wash carefully the oranges, cut them in halves.
Take the juice out of them, being very careful not to break the rind. Remove any little part left inside. In a pan mix the sugar, the juice, the cornstarch and take it to a boil, stirring constantly with a wooden spoon. Once it starts to boil, take it off the fire, add the butter and cinnamon and refill the orange empty halves, top them with the orange grated rind, as an ornament, in the borders if you wish or all in the middle. Take them to the refrigerator until it is very cold.
It’s just delicious as a summer dessert. You can serve it with a glass of iced tea.
