Nicaragua Food: Vigoron
Recipe of Vigorón from Nicaragua
This is a very popular recipe from Nicaragua. It is often eaten as breakfast and also as a snack at night before going to bed! They love it, and usually serve it over a banana leaf.
As usual, other Central American countries share the love for this dish.
Ingredients:
3 pounds of yucca
½ pound of fried pork rinds
banana leaves
Curtido (see our recipe)
Procedure:
Peel the yucca and boil in, in large pieces, with abundant water and salt. Let it be cooked until it is tender. It takes about 50 minutes.
Place a portion of yucca in the middle of a banana leaf.
Put pork rinds over it.
Cover this with a portion of Curtido.
You can also do this on a dish or even using a large loaf of bread as a dish.
Serve it and enjoy it!
