Food of Nicaragua: Gallo Pinto

Recipe of Gallo Pinto from Nicaragua

This is a recipe that is shared and enjoyed in Nicaragua as well as in Costa Rica.  There are few differences between them, mostly in the way to serve them.
Nicaraguans use red beans to make it tastier and more colorful.

Gallo Pinto of Nicaragua

Ingredients

3 Tablespoons of Coconut oil
2 large onions chopped very thinly
2 red peppers, cut very thinly also
3 garlic cloves, chopped
3 cups of cooked red beans (save the water you boiled them into)
grated nutmeg
salt and oregano
4 cups of boiled rice

Procedure:

Put the oil in a large pan, heat it and then put into it the onions, pepper and garlic and let this get cooked for about 4 minutes.  Add the beans, the other  ingredients and  take the fire to the minimum and let it get cooked for another five minutes.  Add the rice, and 2 cups of the beans’ water.  Let it cook for five more minutes, moving it with a wooden spoon.  Then put the fire off and cover the pot for another five minutes.
Serve hot.  If this is for breakfast, serve in the same dish scrambled eggs and enjoy it all!
