Desserts from El Salvador: Maria Luisa Cake

Ingredients:
This is a very popular cake in El Salvador. It can take different fillings. The original recipe is made with orange marmalade but you can use jam or jelly or whipped cream as a filling, or chocolate cream also. Either way it is tasty and rich.
1 ½ cup flour
2 teaspoons baking powder
vegetable butter, 3/4 cup
2 tablespoons grated orange rind
1/3 cup orange juice
5 eggs
1 ¼ cup sugar
1 cup orange marmalade
¼ cup powdered sugar
Procedure:
Prepare 3 round cake pans, butter and flour them.
Beat butter and sugar with electric beater, until they are creamy. Add the orange rind and continue beating. Add an egg at a time always beating in between.
Sift the four with the baking powder and add it to the sugar mixture in three parts, adding also the orange juice in three parts, alternating. Beat until smooth.
Put the batter in the three pans, and bake each in a medium hot oven for 25 minutes.
Wait until they are cool to fill them with two layers of marmalade, and the top of the cake, just make it fancy with powered sugar. On the borders of the top of the cake, you can sprinkle a little of grated orange rind, as an ornament.
This basic recipe can be used for other kind of cakes, using different fillings. You can use milk instead of orange juice, and fill it with “dulce de leche”, a milk jam, you’ll find the recipe in our pages. Anyway, it is delicious with a cup of coffee after dinner!
