Food of Honduras: Coconut Bread

Coconut Bread from Honduras: Recipe

Ingredients:

2 grated coconuts
31/2 cups of flour
1 tablespoon of butter
1/3 cup of sugar
1 teaspoon salt
2 tablespoons yeast
3 Cups of warm water
½ cup of warm water

Preparation

Add about  3 cups of warm water to the grated coconuts and let it stand for a while until it is well mixed. 

Dissolve the yeast in the ½ cup of warm water, add  2 teaspoons of sugar and let it stand till it makes bubbles.  Then add the other ingredients, slowly, kneading well.  If you need more flour to knead with, use it.

Cover and let the dough in a warm place until it doubles in size.  Then prepare the loaves of the size you want, kneading slightly again each portion, as to give shape to it,
Bake in a middle warm oven for about 45 minutes.

Let it get cooled before using it.
