Costa Rica Food: Yuca Cakes
Recipe of Yuca Cakes from Costa Rica
2 pounds fresh yuca
1/3 cup of butter
4 tablespoons flour
¼ teaspoons grated nutmeg
¼ cup grated cheese
¼ teaspoon salt
Boil de the yuca in water, add salt and let it be well cooked.
Once done, take it form the water and make it mashed, being very careful to let it very creamy.
Add the eggs, one by one, beating well after each addition. Add the butter, in the same way. Make a very soft batter, and then add the flour, the nutmeg and the cheese.
Make an even batter and after covering your hands with flour, make small cakes, or small balls (golf size balls), or flat as tortillas.
Fry them in abundant oil.
Put them over kitchen paper towels as to take exceeding oil off and serve them hot.
They can be served with steaks, or with pork ribs.
