Food of Costa Rica: Beans with Pork

Recipe of Beans with Pork from Costa Rica


6 pork cutlets
2 onions
2 red peppers
½ kilo of tender beans
4 garlic cloves
6 small potatoes already cooked, cut in squares


Boil the beans with salt for about 30 minutes or until they are ready, put the fire off and leave the beans in the water.  In another pan put the onions, the peppers and the oregano, the garlic cloves finely chopped with the oil, put the cutlets in and add a cup at a time of water until the pork is done.  It should take some 30 minutes.  Add the potatoes and add the beans and the water left in their pan.  It should be a little juicy in all but not too liquid, as a little sauce over the cutlets.

This can be served as a starter and should be served in small portions since it is very strong.  Delicious with a good red wine!
