Dessert from Belice: Coconut Pie

Recipe of Coconut Pie


1/3 cup butter
1 cup brown sugar
2 cups all purpose flour
2 teaspoons baking powder
4 tablespoons water

2 cups grated coconut
1 cup brown sugar
1 cup water
3 teaspoons cinnamon


In a bowl mix all dry ingredients for the dough ( flour, brown sugar, baking powder, butter) and work it with your hands until the mixture has a crumbly aspect.  Then add the 4 tablespoons of water and make a sort of sticky dough. In a pie baking dish, buttered, spread a 80% or this dough, with your hands, covering it all carefully.
Prepare the filling:
In a pan put the grated coconut, the 1 cup of brown sugar and the cup of water and let it boil until it makes a syrup.  Then cover the dough with this new mixture.  With the 20% of the dough you left aside, cut long strips and cross over the syrup with those strips, forming an ornament. 
Take it to medium hot oven, and cook it foil covered for the first 30 minutes, then uncovered until it gets golden on top.  Sprinkle the top with the cinnamon when taking it out of the oven.
