Dessert from Belize: Coconut Cream Pie
Recipe of Coconut Cream Pie
This is a pie baked with one crust below, then the cream and whipped cream on top, and with grated coconut over it.
1 ½ cup milk
1 ½ cream (of milk)
1 cup sugar
¼ teaspoon salt
1 teaspoon vanilla
1 cup grated coconut
1 ½ cup whipped cream,
1 pie shell
Butter a baking dish, and put the pie shell to a medium heat oven being careful that it doesn’t get burned.
Meanwhile prepare the filling:
Put in a pan, the eggs, the milk and the cream, and sugar and salt and bring this to a boil, stirring it constantly with a wooden spoon. Once it boiled for 4 minutes, take it off the heat and add ¾ of the coconut, vanilla and mix well.
Pour this over the baked pie shell and let it cool for a couple of hours. Then take it from the refrigerator and top it with the 1 ½ cup of whipped cream, and use the rest of the coconut to sprinkle over.
And take it back to the refrigerator for another couple of hours.
