Food of Belize: Fried Shrimps
As Belize is well known for its seafood recipes, here is one of the great favorites!
Recipe of Fried Shrimps from Belize
2 pounds large shrimps
½ cup of cornstarch
½ cup of flour
1 cup milk
1 teaspoon oregano
1 teaspoon cumin
1 cup grated coconut
½ cup oil
Boil Shrimp 15 minutes, when done, cut them along side, so that they lay flat.
Beat together the eggs, the milk, the flour and the cornstarch and the different tastes.
Pass each shrimp, carefully so that they don’t get broken, by this batter, then coat them with the coconut shreds.
Place them in a tray and let them rest for an hour in the refrigerator.
In a deep frying pan put the oil (you can add more oil as it will be needed) and let them fry until brown.
Put them over kitchen paper towels to remove excess oil and serve them hot.
Delicious with boiled potatoes!
